Tencha tea produced in Mie Prefecture is used.
Tencha is the raw leaves before being ground into matcha using a millstone.
Tencha is cultivated in the same way as gyokuro, by covering the tea plantation and shading the leaves from the light.
Shading increases the amount of chlorophyll in the tea, making it a soft, bright green color.
It also suppresses astringency, and gives the tea a sweeter, more umami taste.
The finished “Tencha” is carefully stone ground to make matcha.
